As the title says, I've started conversion of the 1987 Bastogne campaign by Frank Chadwick into something playable using the Rommel rules by Frank Mustafa. So far I've got the map done which nicely will allow the full campaign to fit on my 12' x 6' table. Next up will be the OOB's and then the scenario specific rules. Details in my blog post.

How will you do the villages, they look from a modern map of the area to still be about 2km apart, but only a few hundred meters across. They may look a bit strange given you seem to be using very big (25mm?) troops. Villages were key strongpoints in WW2.

I'd go with what percenatage of a grid square is village. As in Rommel it is not the actual village but predominant terrain that determnes the square

My understanding is that in Rommel you really only put largish urban areas on the map. My thought for the skyline drive villages, which had a significant impact in slowing the German advance, would be to put prepared positions in those locations.

You could also define small built up areas as influencing only one particular square or hex border, affecting only movement and combat across that squareside/hexside.
