Are there any good books or online articles on the fighting, skirmishing, cattle raids, etc in Westchester County during the American Revolution?

Good articles JS!
Simcoe's and Ewald's memoirs will give an excellent feel for the type of small ops that were waged within the neutral ground.
As linked above, Hufeland's book is probably the best on background and general coverage of the skirmishes and its often internecine warfare.

FlyXwire: agreed re Hufeland's book. It's surprising what info you can get from newspaper / magazine articles.

Here's a few more links to add to yours, not all "Westchester", but of the Petite Guerre and 'special ops' in and around New York City -

Obviously I don't intend to confine the gaming mayhem to New York.
That's just the kind of gaming I've been doing lately, and want to add some variety to the scenarios.

And of course thanks for the links and suggestions.

A new book is out called "The Grand Forage 1778" that covers actions in north NJ, NY, and Connecticut. Still reading it but it is very good. Recommend you get it.

I have seen this pamphlet somewhere along the way, it is mentioned by Blake Bell (see Pell's Point, above) in some of his other writings as unavailable.
Franko, Alfred Michael, Pelham Manor: The Forgotten Battle of the Revolution: Near Mount Vernon, N.Y. (Pelham Manor, N.Y.: The Bicentennial Committee of the Town of Pelham, New York Oct. 1975) (republication of 1963 publication, revised in 1966; 67 pp., 12 pp. of plates, ill., 22 cm with bibliographic references).

By the way,the author, Alfred Franko, was my 7th grade science teacher.
