I know many Chinese who first boil or simmer their ribs in water that has various species in it, then finishes them off in a wok with more spices. The trick is to cut the ribs into about 2" long pieces to fry them in the wok.

OOOPS that is a bit if a goof. "species" I assume is spices, but it does kinda give a funny twist to the sentence!
