Any novels out there that do a retelling or
new theme on the Norse Ragnarok?

Not exactly Ragnarok, but American Gods by Neil Gaiman is excellent and features a modern-day battle between the Old Gods, including Mr. Wednesday (Odin) and Low-Key Lyesmith (Loki the Liar), and the New Gods of the Internet and TV: link

Here are two more things that don't fit the bill…

The Long Dark Tea-Time of the Soul by Douglas Adams has the Norse gods walking around in the modern day. It is, of course, very silly, but I think the Dirk Gently books never got the recognition they deserve.

Kenneth Hite also put together a roleplaying setting called The Day After Ragnarok which is not at all a novel, but has an interesting take on Ragnarok that is faithful to the myths but also modern and surprising.

I'll be interested to see if there's any decent books that fit your requirements more closely.

iirc Cthon by Piers Anthony was a retelling in a scifi vein.

"Norse Code" by Greg van Eekhout is a simple but entertaining modern-day Ragnarok. It's chock full of fun Norse mythology. I rather enjoyed it, but it's not high literature.
