Gentleman I am visiting Edinburgh this Wednesday and was surprised how poorly I failed in Google Searching to find anything cool in the miniature gaming world to put on my must see list:(

Is there a great store I don't want to miss visiting or a Manufacture or really anything you guys might suggest while I am spending the day in town

Hi,
There aren't any wargames manufacturers in Edinburgh, the nearest is Warbases which is in Cairnyhill, near Dunfermline. You can reach it in about an hour and a half by public transport from Edinburgh city centre.
There aren't any decent games shops in the city centre apart from the Games Workshop but Wonderland Models on Lothian Road is a very good model shop with a good range of plastic kits and figures including some Bolt Action and Perry Plastics.
Further out near Fountainbridge there's a games shop called 6s to Hit, which is OK but nothing amazing (at least in my opinion).

I find it impossible to visit Wonderland and leave without purchasing a pile of things. It is very much an old style hobby shop – the sort that doesn't exist in many places anymore.

Your timing will negate you from visiting the local club SESWC who meet on Thursdays.
