Someone notify Max Miller of "Tasting History"! Stat! He has made Garum. The "traditional" way. 🙄 Supposedly Worcestershire Sauce, which nobody can pronounce correctly, is also made from fermented fish. Anyway, check out his YouTube channel. |

I had a couple of mates round for a Punic Wars game a couple of months ago and cooked up about half a dozen dishes from Apicius. Was surprised how good it all was, very asian tasting, heat from pepper, sweet and sour from honey and vinegar, earthy from cumin and coriander. Garum tastes much like Thai fish sauce. All washed down with some saffron and honey spiced white wine. |
