Did the Union or the Confederate cavalry in the ACW continue the European practice of giving their trumpeters white/grey horses as a distinction?

In the Union cavalry--and probably in the Confederate--some commanders used greys if they could get them for their trumpeters. However, horses wore out fast in active service. The Union had remount depots, but the Confederates provided their own mounts. If a Southerner lost his horse he remained dismounted until he could find another, All-in-all, finding another grey would be hit-or-miss.

If so, it would be more at the start of the war. As the conflict wore on, chronic shortages in remounts on both sides – especially in the western theater – would have made the practice impractical

Agree – from what I have seen at least mid-war the musicians had pretty much the same colour horse as the other troopers

In articles I have cited the case of an Infantry Lieutenant home on leave who reported to the Talladega muster camp, he was from Randolph county, with a horse . He was sent to a cavalry unit as a private.
So provided your own mounts was really important in the CSA.
