Either to refight, or just because you find it interesting.
Mine is Froeschwiller/Woerth Aug 6, 1870. The French 1st Corps with some reinforcements from 7th Corps takes on the entire Prussian 3rd Army under the Crown Prince. I have re-fought this battle many times, and it never fails to provide surprises and interesting outcomes.

Loigny / Poupry has a lot going for it.

It's a nicely balanced action in which both sides get to move a lot. Always a good game and can turn out in very different ways.

It features colourful troops on both sides. The German force includes the Bavarians. The French get a mix of regulars and garde mobile plus the Foreign Legion and the Papal Zouaves.

In practical terms, it's a good club game as the terrain is easy to set up.

It's also a good intro game for new players, as the forces on-table at the start are relatively small, then reinforcements for both sides march on later.

Even though Froeschwiller is my favorite, I have always entertained the idea of re-fighting Mars-la-Tour with its HUGE cavalry scrum. Seems like a cavalry battle would be a lot of fun to do.

Mars-la-Tour is probably a close second to Loigny / Poupry as far as I'm concerned. Similar in that both sides are frantically trying to maneuver, in MLT's case either to get through gaps or to plug them. Dunno about cavalry scrums – its more distinctive feature for me is the sheer asymmetry between very outnumbered (but agile and aggressive) Germans and huge numbers of hesitant, ponderous French. Always entertaining, anyway, as witness this AAR:

OC – beautiful layout! My brother and I actually sculpted a lot of those 15mm figures. The Old Glory line. Glad to see that you are getting a lot of enjoyment out of them!

Froeschwiller/Woerth Aug 6, 1870 is a great battle to do. I had to break it up into four scenarios.
