Nobody on the two Anycubic fan pages I follow will tell me how to get any further. I have banding around the sides and mushrooming at the top.

In general, check that your screws and belts are fairly tight to reduce wobble, check your e-steps to make sure you have good extrusion, reduce layer height to hide layer lines. Is that a raft? A skirt or maybe brim should do if your printer is tuned right.

How do I check my E-steps? Everyone I ask tells me these things and won't tell me how.
I think I used a skirt on that one?

Checking e-steps is verifying that when you tell your printer to extrude 100mm of filament it is actually doing it. I don't know the exact steps to do it on your machine but there should be a you-tube video on how to do it for your printer. Like this one: YouTube link
