Disruption is a better term than capture.
Capture implies the physical occupation of the guns and dragging them back to friendly lines. That did not happen.
Several rules account for the uncontrolled charge of British cavalry with a special rule on recovery.
After studying back in the 1980s, several battle reports on cavalry charges, rather than allowing recovery and subsequent charges, the cavalry tended to charge once per battle. Yes there are exceptions. I never talk in totality.
So in rules the ability for recovery should be more difficult.

Looking for it. A couple of articles where even infantry squares were overrun and disrupted to a point that the infantry unit was ineffective for the rest of the battle. For examples is the painting titled Last banners showing the cavalry presenting captured flags after the charge. The charge by Ney was the one charge by Cavalry at Waterloo. A reserve lancer unit did charge the British cavalry after they passed the gun line. The lancer devastated the heavy cavalry.

The Union Brigade and Household cavalry were counter attacked by Cuirassiers, Chasseurs a Cheval of the Line and, of course, those nasty lancers
