When working on hobbies, such as painting miniatures or working on models, how often do you wear headphones/earbuds to listen to audio and/or watch video or just to keep out external noise (sound-cancelling)?

I paint in a room off the basement apartment I built out for my 81 yr old mother. Her TV goes to 11. So, without headphones, I'd go insane listening to antique roadshow or some other crap. So it's a necessity.

No, perching stuff on my head is one more fiddly distraction from what I'm doing with my hands.

I do sometimes play music or a podcast over a bluetooth speaker, but I find I concentrate so hard I don't pay attention.

On the other hand, when I'm tired or if I've hit a spot on a project where I'm not sure what to do next, having the music or podcast is a great time waster – I listen to the audio and zone out from the project.

No, never. I have a small portable CD player where I paint for music or audio books when I want it. And I could attach a laptop to it and play from my iTunes library.
