This certainly sounds like an interesting campaign, especially if you fancy painting cavalry! Two comments: 1) I would look into why an Ottoman army mobilized near Istanbul in the spring took until September to march to Khotyn. Admittedly, it is around 775 miles (1230 km). Were there logistics problems? Wretched weather? Did Osman dawdle along the way? Did they just get off to a late start? Still, the timing roughly corresponds to that of the Ottoman campaign and Siege of Vienna in 1529. One suspects they were operating at the far end of their range. 2) For inspiration, see if you can find a copy of the recording "Mehter: 700th Year Anniversary of the Establishment of Ottoman Empire" by the Old Janissary Band of Istanbul. The pieces of music cover the whole of the Ottoman period (one piece is the Osman Pasa Margi, which would have been written after Osman Pasha's defence of Pleven/Plevna in 1877), but it is still great fun.
