I'm trying to find out which manufacturer makes the monks in the peasant unit shown on page 60 of the Warhammer Ancient Battles book Vlad the Impaler.

The picture caption is: Giovanni di Capistrano leads the unruly peasants out through the walls of Belgrade to face the might of the Ottomans.

The peasants appear to be from Old Glory Transylvania range.

I don't have my copy of the book right at hand, but if my memory serves correctly, the monks from the El Dorado Adventurers range command pack, from Wargames Foundry, feature heavily in them. See the figures on Foundry website:

These were sculpted by Mark Copplestone back in the day, and represent 16th century conquistadors. The monks themselves are more timeless, but if you buy the pack just for them you might need to figure out what to do with the standard bearers and drummers.

I double-checked my copy of Vlad the Impaler, and I can now confirm that the figures shown in the picture on page 60 are the ones from Foundry that I linked.
