Well, there are quite a few depending on the era of the Crusades that you are interested in. Gripping Beast do a large number of of figures for early and later Crusades periods. They also do Muslim figures in plastic and have a lot of metal miniatures as well. Footsore Miniatures does both Crusader and Muslim forces as well. Fireforge does plastic ranges for the later Crusader period, and they recently released Moorish infantry and Turcopoles that paint up very nicely. They also do a pretty comprehensive Byzantine range in plastic for the period. Old Glory does a nice first Crusade line covering Turks and Crusaders as well as Fatimid forces. And, of course, the Perry range for the First Crusade is fantastic and has personality figures as well. They also do Armenian troops for the period which nobody else does in 28mm. Lots of great options for you, and google image search will give you lots of inspiration!

For Plastics, Fireforge do some lovely Crusades troops, but you may well wait for Victrix who are starting a dedicated Crusades range soon!

Footsore Miniatures do a nice range of Crusades.

Second vote for Footsore. They are excellent and well scaled. Fireforge if you are interested in plastics.

Old Glory makes Crusaders, Sarracens, and many other useful figures. As usual, their packs are 30 infantry or 10 cavalry. Good stuff.
