I only have a 6' by 4' table. Is Maneouvre of any use to me either as a Corps or ME order? Never been able to get my head around Support/Intercept order. Why can't the cavalry in question just be given a straight Attack or Defend order to protect the infantry?

Maybe only if you have off board units and orders. It still would limit any on board unit from diving into a fight they might not want to get into.
My bigger board manuver/intercept comes into play fairly often.

If you activate the "intercept" portion of the order it means you convert to attack which will give you pluses when you roll for tactical activity. Since it is a choice to activate, if you have decent commanders it gives you more flexibility than a straight Attack or Defend order.
