Ma famille dans le fin fond de la Montagne Noire fait le cochon tous les ans encore, en Février. On se réunit avec mes oncles et tantes et cousins et on passe un gros week-end de trois jours minimum ensemble à le faire.
Mais on ne le tue pas, c'est interdit, donc on achète le cochon à l'éleveur et le fait abattre à l'abattoir puis on le récupère et on fait les pâtés de foie, saucisses fraîche et sèche, malbrat, frézinat (mon préféré, fait avec la viande du cou qui traditionnellement était où le cochon était égorgé et donc la viande que le sang touchait n'était pas utilisée pour des salaisons et était mangée immédiatement dans le frézinat, maintenant il est plus tué comme ça mais on fait encore le plat car c'est délicieux) boudins, et j'en passe. Ça me donne envie tiens! |
