Can anyone tell me whether there were any Saxon regiments that fought with the Swedes during the Great Northern War? I'm sure I read somewhere that there were, but can't remember where I read it.

Sweden invaded Saxony in 1706. So I guess they were involved.

I think Saxony was an opponent. Holstein-Gottorp, Poland and some of the Cossacks were Allies.

The Swedes took a large number of Saxon soldiers prisoner at Fraustadt in 1706. At least two battalions were later formed of these prisoners and taken into Swedish Service. They fought in the Swedish army at the Battle of Helsingborg in 1710. They were uniformed and equipped like other infantry in the Swedish army. It is important to remember that while these "Saxon" prisoners came from the Saxon army, many were probably from other parts of Germany and elsewhere.

According to "Stora Nordiska Kriget 1700-1721" by Höglund/Sallnäs there were four units with Saxon soldiers:

Sachiska infanteriregementet 1152 men(Schommer), formed in 1707 with Saxon POWs. Disbanded 1721

Sachisk infanteribataljon(Straelborn) 510 men, formed 1707 but capitulated to the Danes in 1710

Sachisk infanteribataljon(Boije) 521 men, formed 1707 and destroyed at Kolkanpää 1708

Sachisk infanteribataljon(Seulenburg) 518 men, formed 1707 and destroyed at Kolkanpää 1708

All dressed in blue uniforms with yellow turnbacks and stockings. The first two in blue karpus and the other two in black hats.

There were many other enlisted units with soldiers from the Baltic states, German, Swiss, French. Most dressed in Swedish uniforms but a few in captured uniforms or civilian dress

Schommer's regiment did not have pikes at Halsingborg, and it is unlikely that any of the others did.

Nitpick, but perhaps helpful to people googling: "sachisk(a)" should be "sachsisk(a)". The word means "Saxon", logically enough.
