I know Rangers tended to wear red ones, and I'm guessing their Paras wore yellow as I've pictures of troops wearing that colour too? But I've seen blue ones and white ones and I wondered if they were certain types of infantry that wore them i.e armoured infantry as opposed to footsloggers or was it a matter of personal or regimental taste?

The only thing I found is that the Rangers liked to wear red ones, as your post said. I suspect that if you paint them in ARVN branch colors you would be safe.
