Can the material GW uses be flexed, perhaps by dropping it in boiling water? I have some skinks I would like to convert into riders, and I need to spread their legs apart into a riding astride position.

I don't know about boiling water, and it seems that approach would make the rest of the mini difficult to handle. I have bent GW products by briefly holding the bend point over a small candle.

… my preferred method for infantry to cavalry conversions is to cut off one or both legs at the hip joint, then secure the figure to the saddle with a small blorp of Knedatite (or the binary clay of your choice) that also holds the legs into the groin. I think this allows good positioning of the legs in situ instead of having to guess on leg and feet angles without the model in the saddle.
