What auxiliaries would Rome have had in the fight against Gaul and against the German tribes? Other Gauls, obviously, but would the Spanish been there? How about Numidians? Thanks in advance.

I think Spanish and Numidians would be reasonable. Wargames Foundry had an article on the Marian/Caesarian legions with overview of Caesar's campaigns and breakdown of auxiliary contingents.

Spanish, Balearic Slingers, Cretan Archers, Numidians (both light infantry and light cavalry), Gauls, Germans, Ligurians

Ceasar also used German cavalry against the Gauls – I suspect that the German cavalry`s light infantry support may have been an important factor in their success against Gallic horsemen.
