Looks like they almost got some cheese on there, and I really don't see any evidence of sauce at all, other than a slight reddish tinge where perhaps it once was before soaking into the bread, or evaporating into the air.

That is definitely not "pizza".

Perhaps tomato and cheese flavored bread.

Yeah, I wondered the same about the cheese and sauce. Not the way I want my pizza.

White sauce or Alfredo sauce and mozzarella, both white.

My wife works for Panera, so she has brought a few home. I can say that there is definitely lots of cheese on the ones we have had. The cheese that you clearly see in the photo is extra chunks of mozzarella. Not much sauce though, however they add a drizzled chipotle mayo on top of the two better ones.

Armand,

Do you prefer Gramado or Porto Alegre style pizza?

Both!….(smile)

Gramado at Cara de Mau ou Hector Pizzaria Temática…

Porto Alegre at Ciao Pizzeria Napoletana ou Nono Ludovico …

We have so many good pizza places around here. If I want pizza I wouldn't go to Panera …

For Americans,

Gramado pizza is similar to Chicago style with very thick crusts.
Porto Alegre is similar to New York style with the thin crust.

The nice thing is that they are only about an hour and a half apart so it is easy to try the different styles. Though Fino's pizzeria in Sapiranga was the best and his file e camarao pizza was fantastic. Personally I prefer Churrasco in POA and Cafe Colonial in Gramado if I had to choose.
