Chop bacon, fry until fat runs, fry thinly sliced onions in bacon fat, add chopped or thinly sliced cabbage and only fry until the cabbage changes color -slightly-. Serve immediately. I've found it is even good cold the next day – we cook in a 24"/50cm deep wok so have enough for 10-20 for a main course.

I love cabbage in its sauerkraut form. I could eat the stuff every day! I just don't get cabbage without the tang? Though with potatoes, carrots and corned beef I do take exception.
