What branch of the army did the crews of these vehicles belong to? I have a couple of the Airfix, which need the Matador mudguards and a better crew, as those supplied are in 1940 rig. I am not sure what rig they should be in though. Any thoughts?

I didn't realize that the famous pink counters for Panzer units in the old Avalon Hill games were historically accurate. ;)

Interesting, so black tank crew garb? I had always thought of them as gunners somehow.

You're thinking of the Stugs. They were manned by artillery (red waffenfarbe). Until Stugs began to be issued to make up the strength of tank units when production couldn't keep up with demand (something to do with bombing factories).
Armored cars were either Panzer (pink) or Recon Cavalry (golden Yellow) depending on each units parent. link
As for the uniform,remember that by the time the 234 series were fielded, there was a lot of variation in who was manning these vehicles.

As long as the odd Panzer division used them I can presumably justify panzer rig?

But wouldn't their piping color be yellow for recon/cavalry?
