Aside from the age-old, well-known endless manufactures, do you know of any small factories offering original items for the Franco – prussian war of 1870 at 1/56 th or 1/60 th scales.

Not entire ranges, but Askari makes zouaves and Turcos for their colonial range that would work nicely. Their Chasseurs d'Afrique could also be used. link
Eureka makes a charging Greek officer (very dynamic!) who could lead some of your French units, if you don't mind painting buttons on his tunic (the Greek tunic had a flap that covered the buttons, but was otherwise very French in style). link

To follow on with Grelber's comment, I use both the Askari Turcos and Zouaves in my French 1870-1871 forces, as well as his mounted Chasseurs d'Afrique. link

Eureka has both French and Prussian infantry link

I think french generals with bicornes in real 28mm style are missing (Foundry is more 25mm).

The pieces of 4 La Hitte Model 1858 of the French artillery for example … In I look for small factories because sometimes there are nuggets on them.
