Wasn't there a story about a French officers horse, a mare, who, during a battle was bayoneted by a Russian Grenadier, and she responded by biting his nose and tearing half of his face off?

I would guess you're recalling Marbot's account of the 14th regiment (can't recall if Light or Line) at Eylau, 1807. The mare was called Lisette.
