Remember your defenders do not have to be uniform or have the "latest, greatest" armor. There were "Gentlemen Adventurers" from England, France, the HRE, Spain, Italy, etc. that came to help the Knights. In The Great Siege, there is a quote from a Spanish observer that the Knights wore a variety of armor, much of it old and mismatched.
