Question: Apart from the surprising good of this set … in real combat … the gunners would carry their backpacks …?

Yes, I would presume that their packs and muskets would be on the various "wagons" assigned to the battery. It is hard enough to work a gun in full uniform, adding a heavy pack and musket would have worn the gunners out even faster.

Is this a Zvezda Saxon artillery or a conversion of the French 1812-1815 set?

This explains that they are a repaint job of the French figures. Very amusing article about the challenges of assembling these;
