Would I be correct in assuming that British Royal field artillery in the 1860's were organised as 6 gun batteries in 3 sections of two guns each?

Yes. There was no truly radical change from the Napoleonic wars. There was more use of sections being deployed independently on colonial campaigns but it would be the First World War before any substantial changes.
