I am trying to find Boer style ox wagons (with the partial cover). Does anyone make these?

Take a look at the wagon selection from Irregular, as well as Essex. I don't know if they have what you want, but they seem to make a wide variety of wagons and carts. Minifigs also makes a few colonial wagons.
