About two years ago, while in Nashville, Tennessee, I dined at a restaurant that was serving maple bacon cheesecake that evening. It was the absolute best cheesecake I've ever had. Everyone at the table had a bite including the two vegetarians that were with me. Bacon and all. It was that good. Sadly, I do not remember the name of the restaurant. It was in a trendy neighborhood about ten minutes or so from downtown. But I'll never forget that cheesecake. |

My cheesecake axiom: If you think your cheesecake will be improved by putting Oreo cookies on it, you make a pretty crappy cheesecake! My vote:

My mom had a lemon cheesecake recipe made with Jello. It was on a crust of graham crackers and put into the refrigerator to sort of become the consistency of Yoplait whipped yogurt. I need to make it this summer. It has been much too long since I have had it. It was a great cool summer desert or meal depending on what I could get away with. |

My wife's cherry cheese cake. The first time she made it was when we were in university as we were in our final year finishing off our undergrad degrees. We had been dating only a couple of weeks. The doorbell rang…I answered it and she was standing there with a cake container. I knew it wasn't my birthday or hers. She came in and opened the lid up. I had never had cheese cake before and after taking a taste it was love at first bite!! Oh, and we eventually got married and she has made many different types of cheese cakes since then but I will never forget that first cherry cheese cake she made especially for me. We just celebrated our 30th anniversary this past August. Unfortunately due to her food sensitivity issues she doesn't make cheese cakes like she used to with her special crusts anymore….just the cheese cake with various toppings. 😔

I have a friend who is a trained chef who makes a cheese cake with a southern pecan pie topping. It will remain my favorite forever. |
