Blue Max is my personal favorite, but I'll add Memphis Belle and 303 Squadron to the mix, also.

Many for WW2, but have found Blue Max to be the only really good one for WW1.

Battle of Britain
Sink the Bismarck…. I just love the Swordfish.
It was customary pre-war for Boeing bombers to be photographed with Mt. Rainier in the background. Having recently moved to Seattle, I enjoy the shot in Strategic Air Command of Jummt Stewart's B-47 flying past Rainier.
12 O'clock High, the sheer courage of what the B-17 crews did day after day is awesome.
Blue Max.

Island in th Sky, with John Wayne. Transport pilots flying C47 trying to survive a forced landing in the far north just after WW 2. Any movie with the Duke is good.
This gives you an idea what it was like flying in the days before advanced navigation systems became common.

Have to agree that this has great aircraft scenes, as well as being a darn good film.

Twelve O'Clock High doesn't have a lot of aircraft scenes, but is a great "air power" film, as well as being a textbook film about leadership.

Piece of Cake, while technically a TV miniseries, has some great Spitfire scenes (and yes, I know that they should have been Hurricanes).

This is kind of a weird juxtaposition to me, because General James Stewart led about 20 daylight bombing raids over Germany during the war (but I think he was in B-24s by that time).

Look up "Jimmy Stewart, bomber pilot" on YouTube.
