Was everything grey and black? Who used the dazzle paint scheme?

TIA

Quick and dirty answer.

Most everybody used one or another shade of gray with weathered wood decks. Germany tinkered with painting their turret tops to avoid getting bombed by Zeppelin's. Dazzle was an allied innovation to confuse subs. It was mostly late war.

This should be considered a C+ response. Better you do your own research.

Try this for German ship colour schemes and recognition markings.
