I have reluctantly sent my CC info broken up in multiple emails. Why we have to do this in 2018 I can only speculate, but it has caused me to pause before ordering as well. I've also offered to pay the vendor fee for using PayPal, but no success yet.

I always receive my full order from Mr. Hedges, and often a few free extras to further whet my appetite. You just need to be patient, as it is a cottage industry, not a McDonald's fast food drive-thru.
