Most "Sci-Fi" is just action movies set in outer space. I prefer more thought provoking science fiction like the above. But I still like a well made space yarn on occasion.

Here's my list:

Metropolis (Fritz Lang, 1927) -- Granddaddy of 'em all.
20,000 Leagues Under the Sea (Richard Fleischer, 1954) -- Best Disney film ever. Definitive VSF.
Kiss Me Deadly (Robert Aldrich, 1955) -- Hardboiled detective Mike Hammer vs. "The Great Whatsit". Film noir for the atomic age.
Logan's Run (Michael Anderson, 1976) -- Released eleven months before Star Wars!
Nausicaa of the Valley of the Wind (Hayao Miyazaki, 1984) -- Post-apocalypse, Miyazaki style.
Brazil (Terry Gilliam, 1985) -- I used to hate it, now I think it's Gilliam's chef d'oeuvre.
Ghost in the Shell (Mamoru Oshii, 1995) -- One of my absolute favorite films.
The Fifth Element (Luc Besson, 1997) -- It's just so much fun!
Dark City (Alex Proyas, 1998) -- Unique blend of dark fantasy and science fiction. Look for the Director's Cut.
Paprika (Satoshi Kon, 2006) -- Animation director Kon made only a handful of films before his death in 2010. I feel he deserves to be better-known.

Could we amend the poll to remove the Star Trek and Star Wars movies?

I doubt that they would not dominate the top slots, and skew the results, resulting in fewer interesting recommendations and discussion.

Kind of like asking who are the second through eleventh greatest basketball players of all time? Even if you disagree with the presumed #1, he's still going to be #1 and knock other out of discussion.
