Helmet. Easier to discard while you run for your life. Can also be used for a food bowl/cooking utensil.

Hauberk, worth much more than a helm alone. I dare say you could pick up a discarded helm on a battlefield fairly easily!

Chain mail, but its a bitch to maintain. You to put it through sand regularly to keep the rust off.

If I was fighting with a shield and spear in a a shield wall, I would want a helm. If I was fighting with a two handed axe, I would want a hauberk.

Also, cooking in your helmet is a bad idea as in some cases it can weaken it.

Helmet. Shield protects the body.
Far easier to protect your body than your head from a random blow.

With a good shield the head and legs are the most vulnerable areas – helm.

Helm. Protect the head, and run a heck of a lot faster than the guy in the hauberk chasing you. And since I would be using a longbow, I don't need the maille messing up my aim.
Shoot and scoot, that's my plan.

Helmet.

You can cook with it. Protects you from the weather as will as the enemy. You can dig with it and in a pinch it makes a decent weapon.
