While I have some nice uniform plates and information, I'm having a hard time picking the right blue for US Regular Infantrymen.

I typically use Vallejo or GW/Citadel paints and sometimes craft paints. My figures are true 25mm.
Does anyone have suggestions for which blue to use?

Thanks in advance for any info you may have to share.

Try a Vallejo grey-blue No. 70.943.

Sorry for the slow response. Just missed your post. I use the Vallejo colors Deep Sky Blue and Sky Blue, the Sky Blue for shading, on US regulars. It might be too blue but it does match some plates, and it is a tough color to match. I do use the Vallejo Grey Blue for the volunteer uniforms. Just trying to show some difference from the regulars. All go over a black primer. I have been happy with the result.
