If one "hit" can deal multiple wounds do the wounds spread across the enemy unit or does one model soak up all the hits (and extra wounds are lost)?

In 40K wounds go to one model and then stop with that model.

So if you inflict 3 hits on a unit that has 1 wound per model with all wounding and no saves you would kill 3 models.

If the same thing happened with 2 wound models you would kill one and wound another.

If it were 3 wound models you would just kill one.

If the hit inflicts multiple wounds, like d6 or 3, all of those wounds would go on one model.

So if you had 3 hits inflicting three wounds each in the first example above you would kill three models, in the second example you would kill three models and in the third example you would kill three models.

If the models had five wounds you would kill one with the first two hits and then inflict three wounds on another.

Pictor summed it well. Multiple hits are distributed across the unit depending on if the models have one wound or as in the case of Terminators two wounds. A single hit that does more than one wound or variable, i.e., D3, D6 wounds etc. would only go on a single model. These are your character and vehicle killing weapons.

That's my understanding of it. It's important to remember that if you have a unit where all the models have multiple wounds (like a Terminator Squad) you have to keep applying wounds to one model until it is dead. You can't spread the wounds out to keep all of the models alive as long as possible.
