Orcs (or Goblins, or Kobolds) You need your fodder.
Slime, G. Cube or spider: They provide the requisite "ick" factor.
Troll: Because they are cool.
Beholder: covers the two previous areas, and are just so iconic of the whole dungeoncrawling thing; they will also give even an experienced party a run for its money!

The Grunts (kobolds, goblins, orcs, etc.)
Undead (skeletons, zombies or ghouls)
Clean-up crew (gelatinous cube, mimic, oozes, etc.)
A large Bleeped text or more, such as ogre or troll.
An exotic one of a kind (beholder, umber-hulk, mind-flayer, basilisk, giant snake, etc.)

Well, all these lists may work for tactics, but where is the joy?

I think every dungeon should be different; give me variety in my encounters. With that said here are some of my favorites.
1) dragon (sits on lots of treasure)
2) evil mage w/ goblin(or orc, kobold, etc) servants. (Find his spell book)
3) evil adventure party (lots of magic items)
4) drow (they're rich; lots of loot)
5). any leader or chief in a big fight (he's got a unique magic item)

It's all about the loot.

Hmmm, just noticed I picked only four. Last choice would be something magicky:

A Liche (with skeleton flunkies, perhaps) or a Mindflayer.

Good point, but I always see the bigger creatures like Bugbears and Gnolls as "outdoors" encounters. Even trolls for that matter.

Goblins – Kill all you want. We'll make more.
Giant Spider – Need some continuing venom effects after dispatching the beast(s).
Humans – The most treacherous and vicious of foes!
Ghouls – Nothing like undead scavengers to harass and evade the heroes.
Giant Magic/Mutant Mushrooms – Spores can do all kinds of nasty things – poison, psychotropic effects, lung/blood infections, rapid growth/drowning, make a fog/mist, make an incendiary fog/mist, caustic properties, etc.
