I recently bought some Grenadiers de Fischer from Minifigs. They are nicely sculpted with a that classic simple uniformity that seems, to me, to suit the period of the Seven Years' War. How should these be based? As light troop / skirmishers, or did they ever fight in close order? Can they be deployed as a separate unit or always attached to the flank of the Chasseurs de Fischer?

Depends I think on the rule set you use but I would base them as skirmishers

During the invasion of Hanover they were part of some advance guards suggesting they were skirmish/light infantry, but they also did some garrison work and served in defensive positions as well

Depends on what rules or what numerical scale you use. The grenadiers would likely act as formed support for the chasseurs, or as a storming party, again in close order, but whether your overall basing conventions allow for that degree of detail is up to you.
