I'm planning on building matched armies for 1916. What headgear should I go with for the Germans?

Mix if both. Front line units in Stalhelm, reserves and second rate in Pickelhaube. More Pickelhaube on the East

If you are only doing 1916 (and ownwards) I'd go with Stalhelm, it is iconic for mid-late war (even if Pickelhaubes were common in early 1916, later in the Eastern front).

You'll end up getting both at some point in any case, but the Jerries are going to look a bit silly in 1916 if the French and British are in proper helmets but the Germans are running around in a pointy hat that won't keep a sharp stick out, let alone shrapnel.

Something also to consider is that German units that still wore the pickelhaube on the Western Front removed their spikes before entering the trenches. A lot of these units also just wore their soft caps on the front line too.

I'd go mix of Stalhelms and soft caps. IIRC the helmets were issued right before Verdun kicked off.

Stalhelm were issued after Verdun started. The new helmets didn't appear on the Somme until after that battle had started in July 1916.

Reserves in Pickelhaubes and line units in helmet. I would mix in the soft round caps.

Do all three and your not far off.
