In some shows, I see French infantry wearing tall black hats, but sometimes they look they are wearing tall white hats. I can't find much about white hats. Can anyone enlighten me?

It is probably the shako (headgear) cover. Some nations water-proofed theirs and they appear black also. But the French typically left it in a natural color.

Also they would sometimes actually have shako covers in white in the hot climate of Spain and Italy.
