I was looking over their ready made army packs, and I don't see a listing for a French Ordonnance Army, but they do have a Late HYW French Army (1390 – 1485), so does anyone know if that would be suitable, e.g. coming with the right mix of figs in it?

Looks to me like the army is pretty much all knights, with a few crossbowmen, and brigand spearmen in it.

I figured the French Ordonnance would probably have some pikes, handgunners, and/or others as well, plus perhaps a little artillery, for a little variety, and tactical flexibility.

Essex does make and list two Burgundian Ordonnance armies – early and late, and I know those have a more varied mix of troops than the French Ordonnance lists, from what I've read some time ago.

Anyone know what troops are needed for a DBA 3.0, and/or an Impetus army?

i think you will find most of those Essex RMA packs were designed around the WRG 6th edition wargames rules and as a result have some very odd combinations.That army looks too cavalry heavy, and to represent the ordonnance would need artillery and pikes, the Burgundian version looks better balanced.

For DBA 3.0 French Ordonnance:

IV 82a (1455-1480) 1x 3Kn or mtd-4Lb/4Lb general, 3x 3Kn/4Bd, 1x 3Kn or mtd-4Lb, 4x 3Bw, 1x 4Bd or 4Cb or 2Ps, 2x Art or 7Hd

IV 82b (1481-1515) 1x 3Kn general, 3x 3Kn, 1x 3Cv or mtd-4Lb, 1x 2LH, 2x 2Ps, 1x 7Hd, 2x 4Pk, 1x Art
