Why do some manufacturers' Marian Roman legionaries not have helmet crests? Blue Moon's 15mm legionaries are but one example:

Mostly only worn for parade

Yeah, the crests were removable for cleaning and repair. You wouldn't want a lot of that being able to catch your enemy's blades or lance heads. I personally prefer uncrested Legionary helmets.

Other nations wore some type of crests – Assyrians + Babylonians, for instance.

It is undeniable that some cultures wore crests on their helmets and that some saw there being benefits. This does not mean that all cultures would then have done so. Greeks have been mentioned and there seems to have been changes in fashion where crests stopped being worn.

Looking at the available evidence is more useful. Caesar refers to fixing the insignia before battle and this is generally taken to include crests. The V legion is mentioned as having a distinctive crest – see Mike Bishop link

We certainly know that in the Earlyish Empire crests were not typically worn, going by various monuments. IIRC, Augustan monuments also show troops without crest. I'm happy to have the choice of crested and uncrested figures to choose from.
