Duel of Eagles for WWII, and Clash of Sabres for post-WWII – early 1970s are quite good for 3-D gaming.
They have rules to permit you to turn tighter, when using the vertical axis, as in real life. They're reasonably comparable to M&M, and with 1/144th, 1/300th, or 1/600th minis, you can play games on the tabletop, pretty easily.
Paired with my telescoping, swivel-head, Topgun Dogfight 3-D Flight Stands, you can represent 50,000 feet of altitude in 100 foot increments.

You can get DoE and CoS as PDFs, on-line.
They are hex-less, and using curved turning templates for maneuvering, like in X-Wing.
