These guys:

AIS722 Ch'ir Mamochan (Motorised) Platoon

with suitable Peter Pig head swaps, will they "pass" of Iran/Iraq war Iranian infantry? I know I can get away with some of the non-AK PP infantry with head swaps, but not enough variety on their own.

Possibly with the right heads and paint jobs. The FN-FALs and helmets are right, not so sure about the web gear. But they would really only work with Army units. Pasdaran and Baseej would need different figures for sure.

What differentiates the other two, headgear and ak's?

They have a more irregular look to them. Just do a quick google search and you'll see what I mean. But a good paint job and some conversions will help I think.
