I would suggest that all these are based more upon classicising artistic tradition than actual kit.

One major source for the 14th century, the Romance of Alexander by Pseudo-Callisthenes, Instittuto Ellenico di Venezia codex 5, has been attributed to the Empire of Trebizond rather than the Byzantine Empire, see Acrinet, so is not necessarily typical of Byzantine costume.
