I have the warlord waffen SS and they are pleasantly chunky. The plastic Heer looked more slender. I just assembled the Perry bros. Afrika Korps and they are shorter and more slender than the SS. Is this slender build continued through other warlord armies (specifically Italians and brits), or are most of the warlord builds the chunkier type?

I am concerned because I have some warlord Italians on order for allies and they may not mix well with the Perry DAK.

I wouldn't worry about it too much. I think we obsess about compatibility more than we should. I'm a 20mm gamer, in my German force there are SHQ and Britannia. They are about as different in sculpting style as you can get. If I hold one of each six inches in front of my face they look very different. On the table you don't notice. When you paint and base your figures in the same palette and style it really helps them blend in together despite differences in heft, and unless you can source all the figures you want from just one manufacturer (which is unlikely) some difference in sculpting styles is inevitable.

As for the WG Waffen SS and Plastic guys, imho they go together nicely. SS have some additional Bulk thanks to the smocks, and weapons are a tad bigger. Generally, WG minis are very consistent as far as size is concerned.
Perry plastics are a different story. Realistically proportioned, and therefore much slimmer. No big difference in height.Weapons look tiny compared to WG. Wouldn't mix both manufacturers.

Slimmer figures = WW2 Soldiers
Chunkier figures = WW2 Re-enactors

I think I saw that guy playing a confederate in an ACW reenactment as well, well, maybe not, he is a little thin…
