I am looking to creating my own 6x5 foot gaming mat out of either felt, flannel, or a simple bed sheet.

What are the pluses and minuses of using these materials for a gaming mat?

I am not looking to do anything fancy to the mat, like paint it. I just want to lay it on my table and either place hills on top of it or below it.

What say you, TMP?

Flannel can pill pretty easily. Felt is probably the hearties and most robust surface to work on.

That said, if you just want to do some large area coverage with basic design, quickly and cheaply, I think a bedsheet and spraypaint is the way to go.

Most felts shrink when wet therefore drinking whilst playing needs thought….and MDF bases seem reluctant to slide across it

Felt is and can be rather annoying because the corners of stand get hung up on the fabric, after a while it too will "pill up". I'd go with cotton bunting at the fabric store, spray paint odds and sods colors and paint step hills the same-same. And put your hills ON TOP of the surface. My opinion only and it works for me. Of course it will fall short of the glossy picture magazine crowd.
