There is a large range of cardstock models out there these days, but I am struggling to find a decent selection of tanks and other vehicles for sci-fi games. I'm looking for simple models that would work okay in generic sci-fi.

Try and find some of the old Ebbles one they are great.

As noted above, the Toposolitario vehicles are great.

There's also the "Mehari Small Truck", available at Wargamevault (I think).

WorldWorksGames carry the new Ebbles vehicles, a lot of cool stuff there.

Chris,

I use 40k paper kits to start and add stuff based on modern tanks and AFVs. You can add command, recovery, SPG, Air Defence and transport(flatbed) variants, and add armour and ploughs, for some more variety.
