I'm working on a bunch of Great War/Renegade 28mm WWI British. Some of them have a rolled up blanket of sorts on their pack.

What color should this be?

Or, more appropriately, what colour should this be?

Are you sure they are blankets and not rolled ground sheets? Ground sheets are mid brown khaki colour. Iirc Army blankets were grey.

Could also be greatcoats (khaki)

This is probably the anti-gas cape. Khaki drab.
